RECESS May 7

Hi, Boys and Girls - Today is May 7, and I thought it would be fun to do a recipe from our great cookbook called Shared Tastes. Let’s make some "Classic Banana Muffins!"

What You Need:

½ cup margarine, softened

1 cup sugar

2 eggs

1 large ripe banana

1 tsp. Soda

2 T buttermilk (Use regular if you don’t have any buttermilk.)

½ tsp. Salt

2 Cups all purpose flour

 ½ cup chopped walnuts

Cooking spray like PAM or muffin cups

 

What to do:

Preheat your oven to 325. Mix together softened margarine, sugar, and eggs. Slice and mash the banana and add to mixture and beat for about one minute. Dissolve soda in buttermilk and add to mixture. Sift flour and salt together and add to mixture beating at low speed until well blended. Stir in chopped walnuts. Either spray muffin tin with cooking spray or fill muffin cups about ¾ full. Bake at 325 for about 25 minutes. Check earlier just to be sure. You should have about one dozen muffins. Yum Yum.!

It is fun to cook with family and have something good to share when you are done. Be sure to save a muffin to take to school with you in your lunch. See you tomorrow-Mrs. L.
